I love, love, love fresh Pico de Gallo and when the tomatoes are fresh from your garden it is even better! The recipe is super simple, the most difficult part for me was realizing that there is a ton of onion in this dish. I kept thinking it was mostly tomatoes, but not the case.
- 1 Medium to Large Onion (I prefer sweet onions like Vidalia).
- 1 Medium tomato more than you have onions (so if your onion makes 2 cups diced, then you need two cups of diced tomatoes plus an extra medium sized one)
- 1 jalapeno pepper (you can add more or less to taste – typically one makes a fairly mild pico)
- 1 bunch of cilantro
- juice of 1/2 to 1 lime
I’ve also started to experiment with adding a little garlic powder, but rarely add salt because we tend to eat this with tortilla chips which have salt on them. If you are going to use this in a dish (rather than with chips) I would add a pinch of sea salt.
Dice everything up and stir together.
Super simple and always a hit for football parties and the like. Warning – this has a ton of onions, so best not to serve on a first date.
