Bertolli® challenged me and some other bloggers to get creative and make a special meal using the new Bertolli® Meal Soups. The catch? We had less than an hour from start to finish to make this meal special and differentiate it from the “norm” of our weekday lives.
For us, normal is trying to get my family fed (healthy or warm food being a bonus) either before or between sports practices and other extracurricular activities. Somewhere in there we have to squeeze in homework, reading time, and let’s not forget sharing our favorite parts of our day with each other. Add the challenge of finding something my picky eater will at least try a bite of before he announces “Yuck” and it becomes a daily puzzle to find something that meets all of our criteria. Needless to say, speedy preparation and kid friendly are musts.
The Bertolli Meal Challenge
I had to choose from the 4 available varieties of Bertolli® Meal Soups:
- Chicken Minestrone,
- Roasted Chicken & Rotini Pasta,
- Tomato Florentine & Tortellini with Chicken, and
- Tuscan-Style Beef with Vegetables.
For our Meal Challenge, I was torn between choosing the Tuscan-Style Beef with Vegetables or the Tomato Florentine & Tortellini with Chicken. I ended up eenie meenie minie moing it and chose the Tuscan Beef.
First off, I was impressed with how fresh the vegetables and other ingredients looked when I opened the package and put it into the pot.
Even better was that it only took 10 minutes to prepare! Heat to boiling then simmer for 5 minutes and you’re done. While it was simmering I put a large round bread into the oven to heat up and get crunchy, then took the middle out and put the soup into the bread bowl and topped with Mozzarella cheese.
Although the soup says it feeds two, I easily fed 4 with the bread bowl and the Bertolli Meal Soup.
To make the meal special, I
- Unveiled the placemats and cloth napkins that we’ve had forever, but I’m not sure my kids have ever seen,
- Set up a bistro table in front of the fire place, and
- Livened it up with a vase of bright flowers.
I was completely surprised with how little time it took to prepare the meal and make it festive. It was warm, healthy, very quick to prepare and my kids loved the bread bowl concept! A win on all fronts.
