Friday Food: Italian Sausage, Broccoli, & Pasta Recipe

My family loves this recipe!  Plus it is super simple, includes veggies, and is quick.  What more can a mom want?

Italian Sausage & Broccoli Ingredients

  • 1/2 lb Hot Italian Sausage
  • 1/2 lb Mild Italian Sausage
  • 3 – 4 cloves of garlic (diced)
  • 14 oz Chicken Broth
  • 2 Heads of Broccoli Crowns
  • 2 Boxes of Pasta (I like Rotini or Rigatoni)
  • Salt to taste
  • Grated Parmesan Cheese
  • Olive Oil

Step 1:  Boil the pasta.

Tip:  You can use any type of pasta you’d like.  I’ve been using the whole grain or whole wheat.

Step 2:  While pasta water is getting hot, brown the sausage in the olive oil and garlic.

Tip:  I’ve been using the chicken sausage from Sunflower Market to reduce calories.  Pork works well too.

Step 3:  Once the sausage is browned, add the chicken broth then turn down heat and allow to simmer.

Step 4:  Prepare broccoli by rinsing and cutting down to bite size florets. broccoli florets

Step 5:  Cook broccoli.

Tip:  To save on pans and time, I add the broccoli to the pasta when there are 5 to 6 minutes left before the pasta is done.  Then drain them together.

Step 6:  Drain the pasta and broccoli and add to the sausage.  Stir and add salt to taste.  Top with freshly grated parmesan cheese.
