This recipe for camp fire potatoes is delicious, super simple, and perfect for camping or when you want an easy side dish at home.
Camp Fire Potatoes Ingredients
- Chopped Raw Potatoes
- Chopped Onion
- Salt & Pepper
- Aluminum Foil
Camp Fire Potatoes Directions
Step 1: Clean potatoes then chop into small squares (approximately the size of dice).
Tip: I leave the skin on for a few extra nutrients and to save time and effort.
Step 2: Chop up onions into similar size as the potatoes.
Step 3: Add potatoes and onions to a square of aluminum foil large enough to fold over and form a ball. Before closing aluminum, add rosemary (or other herbs to taste).
Tip: I add potatoes and onions on an approximately 2 to 1 ratio (more potatoes). Approximately a fist sized portion per foil ball and each ball is a serving for one person (approximately).
Step 4: Close the aluminum foil until all sides are covered and you have a ball about the size of your fist. Place the potatoes into the embers of the fire (or the grill) and allow to cook for about 45 minutes.
Step 5: Unwrap and serve.
