Caprese – basil, tomatoes, fresh mozzarella – Delish!

This is one of my favorite dishes of all time.  Especially in the summer when you have garden fresh tomatoes just bursting with all that flavor.  Ingredients:

  • Tomatoes (Tip – from your garden or farmer’s market have the most flavor)
  • Fresh Basil Leaves
  • Fresh Mozzarella (Tip – Costco has best price I’ve found at $7 for 2 logs)
  • Balsalmic Vinegar
  • Extra Virgin Olive Oil
  • Kosher Salt or Sea Salt 

Very simple to make:

  • Slice tomatoes (1/4 inch or thinner). 
  • Slice fresh mozzarella (1/4 inch or so).
  • Wash basil and select the best leaves. 
  • Alternate the above ingredients in layers.
  • If basil leaves are more mature aka more pungent or tougher, then use kitchen shears to cut into 1/4 inch strips and sprinkle liberally on top rather than layering.
  • Drizzle with balsalmic vinegar and extra virgin olive oil (quality counts).
  • Sprinkle with kosher or sea salt to taste.
  • Let sit for 30 minutes, take a spoon and pour the “sauce” back over the top.
  • Serve.

If you want to make this a main course instead of a side dish

  • slice and toast french loaf and add a layer on top. 
  • Get a Boboli pizza crust, add some pizza sauce and shredded mozzarella, add this on top and then bake.
