It’s a given that having time for making homemade items is limited when you are a working mom. Therefore, you have to be strategic about where you spend your energy and time. You probably ask yourself “What will give me the most return on my investment? (energy, time, and $)
Homemade Pesto is at the top of my list! I made it for the first time last night and luuuuuved it. It took about 10 minutes total and the bulk of that was picking the basil leaves off of the stems. I used the recipe that I found here. Ingredients include:
- 2 cups fresh basil ($$$ if purchase at a grocery store, but easy to grow in your yard…)
- 1/4 cup freshly grated parmesan cheese (block, not that sawdust stuff in the green container)
- 1/4 cup extra virgin olive oil
- juice from 1/2 a lemon
- 3 to 4 cloves of garlic
- 1/4 cup pine nuts
Basically you just put all of this in a blender and it’s done! Go to the recipe page for specifics….
I put mine on pasta and got rave reviews from my husband’s friend that stopped by. (nothing like great timing to look like superwife! Shhhh, it’s a secret, but last night was the only night I cooked this week. )
You can also put it on sandwiches – ham and cheese with pesto instead of mayo? Or in addition to mayo? Yuuuuuum!
